Pumpkin Spice Mini Loaf
Bake and freeze four mini loaves for on-demand treats or to give as homemade gifts.
1 cup pumpkin purée
1⁄2 cup oil
1 pkg Pumpkin Spice Loaf & Muffin Mix
- Using Basting Brush, generously oil Mini Loaf Pans.
- In a large bowl, whisk eggs. Whisk in pumpkin purée and oil until evenly combined. Whisk in mix.
- Scrape batter into pans; smooth tops. Microwave for 3 min on high, uncovered. Rest in pans for 2 min; invert onto wire rack to cool. Or, bake in preheated 350° F oven, 23—25 min. Cool in pans 10 min; unmold.

To make a glaze, mix 1⁄3 cup icing sugar with 1 tbsp lemon or orange juice. Drizzle over cooled loaves before slicing.
